Charcuterie


We stock a range of charcuterie, locally-sourced from Trealy Farm and Forest Pig. The in-house range varies throughout the year. Some of our charcuterie is shown below, but a visit is the best way to see all we have to offer.

Trealy Farm Coppa

A wonderful ‘Coppa’ from Trealy Farm cut from the eye of the muscle that extends from the shoulder of the pig into the neck, giving it a beautiful marbled look. The meat is dry-cured and infused with a hint of pepper and rosemary for a deliciously subtle but wholesome flavour.

Trealy Farm Beef Carpaccio

The beef is cut from the rump then cured and spiced with coriander. It is then part air-dried which helps give this meat a strong, spicy finish.

Forest Pig Wild Boar Salami

A delightfully deep and rich salami which has been made using wild boar reared in the Wyre Forest, Shropshire.  The meat is delicately flavoured with fennel, garlic and red wine for a pleasant but strong, tangy flavour.
